This is a feature which can be useful but it can be equally frustrating if you don't want it - until you learn to control it.

I would really like to be able to permanently and irrevocably disable the bullets & Numbers ...

Easy: just go to Tools | AutoCorrect Options... | Options, and remove the tick from "Apply numbering - symbol: *".

... it is by far the greatest annoyance in this program, and definitely not needed at all, especially when one can not have in operate the way you want it to, but only the way someone else wants.

No doubt some people like it.

Incidentally, another easy workaround is just to use Edit | Undo (or Ctrl+Z) *immediately* you see the unwanted correction occur. This will remove the correction and leave exactly what you typed.
