Did you have a look at Tools > Outline numbering?
There you can link the levels to the styles of your choise.
(As remarked by others, Heading 1, ..2, ..3 are default. But that's not mandatory.)

And make sure that the individual paragraph styles that you use have no settings on the Numbering tab!

All works like this for as long as I know LibreOffice ;-)
