Is there a way to display the changed document, as if all edits are
accepted, *without* accepting the changes?? IOW, "show changed document".

Probably not the way you want to do things, but installing OOoSVN, and
regular saves to SVN will let you go back to the document, regardless of
changes accepted/rejected/pending.

Never used SVN but have read about it. Actually recall an article several
years ago in which the author proposed using SVN for nearly all file
storage. For exactly the reason you're describing.

This isn't a regular need so I doubt I go to that length to get the result.
