Before raising a bug report I would like to know if anyone else is
seeing this issue:

* Normally when a new document is created in Writer the Document
Properties Title field is automatically filled with the name of the
template (eg. Default) upon which the document is based.

* Changing the Document Properties Title field in a new or existing
document blanks the field in the saved file.

* Opening the saved file in any other version of LO restores the field
lost in version 7.1.0.2

Are you sure you are getting "Default" in the title? I only get a pre-filled title with some template like Modern business letter. Works fine with 7.2 at least.

Yes I get "Default" in the title field with 7.0.4.2 (x64) and all 6.x
versions, but that is down to my profile, otherwise I get the same as you.

The real issue is that 7.1.0.2 anything entered in the title field of a
new or existing document is lost (more accurately disappears) on save.

I ran a few tests here using LO 7.2 alpha, nightly (I don't have 7.1 RC2
here):

1) When I create a new document by going to File > New > Text Document
(without choosing a template), the Properties fields are all blank. But if
I change them and save the file, all is fine when I reopen it.

2) When I create a new document from a template (say, the Default
template), then the Tile field has the name of the template ("Default" in
this case). Changing it and saving the file is working without any issues.

Let's see if anyone has 7.1 RC2 to test this as well.

I have installed 7.1.0.2 (Debian). File > Properties > Description.  In the Title box of a newly created text document, I entered "This is a text". I saved and named the document. Then  I opened it in 7.0.4.2.  I got the same results in the Title box. I added ", but it has changed". Finally, I reopened the document using 7.1.0.2. The Title box contained "This is a text, but it has changed". I have not checked on Windows yet. I will report of this shortly.

I have now created a new document in Windows using  7.1.0.2 that I had just installed. Then I Entered "This is text" (without quotes) in the Title box. I clicked OK and same this file to a thumb drive. Then I switched back to Ubuntu 20.04. I opened this file on my thumb drive using 7.1.0.2 (Debian). What I saw was "This is a text" (again without text. Sorry, Dave; I have not had the same problem as you seem to have.

When I open an untitled text document, under File > Properties > Documents, the title field is empty. This is true for both 7.1.0.2 Debian and Windows. Where are you finding the term "Default"?
