Well, cannot say anything myself here, as I didn't try openmeetings myself yet.

Echo cancellation in mumble only works when you don't output your
microphone directly to your speakers, i.e. mute your microphone
channel for output. It's fine if you let mumble output your own input
to your speakers, i.e. if mumble sends it to the speakers, then echo
cancellation works surprisingly well (in an otherwise quiet
environment)

Or you just have your trigger set too sensitive. If "your" lips are
red while others are talking, your settings are too sensitive.
