I'm not entirely sure how to set up a folder like that, perhaps someone else
knows.
Anyone should be able to create subfolders in assets/ (the Files &
Images Tab in the CMS backend) - select the parent folder, then use
the "Create" button on the left-hand side.
(And yes, please avoid uploading everything to "Uploads" only, try to
give the files some structure)
