Normally the default color is "automatic". Right click the object and click
on the item "Edit style". In that style dialog look at the dialog page "Font
Effects". What entry is in "Font color"?

Do you use a template for that presentation? What text do you see in the
field left from the zoom slider in the status bar?

Do you see the white text in a presentation object like title, subtitle,
outline too or do you see the white text only in the text box?

Do you have set a background color?

It is much easier to help you, when you provide the file for download.

Are you using styles to do what you want? Are the slide shows you mention created using PowerPoint? Impress is designed to work with styles; MS Office for years has not. (Recent version seem to have changed this.) My suggestion is to apply styles to the slide show. The Impress Guide has instructions on how to do this and many more things as well.
