I see only paragraph styles - is it possible to define a style for words?
How?

There are also styles for characters, frames, pages and lists.

Just press F11 and check icons on top of window that will pop up. The second
from the left is for characters.

Please note, that you may wish to italic words for variety of different reasons
(i.e. title of book, word from another language, emphasis). Although they will
look the same, you should create different styles for each case. If you decide
in future that emphasis should be bold, not italic, change will be much
easier.
